The secret that gives our juicy kicked-up chicken its extra-crispy crust? Simply coat pieces in Rice Krispies.
- 6 c. toasted rice cereal such as Rice Krispies
- 1/2 c. all-purpose flour
- 2 tsp. dried Italian seasoning
- 1/2 tsp. cayenne pepper
- 4 lb. chicken pieces
- 1/2 c. bottled creamy Italian dressing
Position racks in upper and lower thirds of oven; heat oven to 400°F.
Line 2 rimmed baking sheets with foil. Place rack in each pan and coat with cooking spray.
Crush cereal into crumbs. Mix in flour, seasoning, salt, and cayenne.
In very large bowl, toss chicken with dressing until coated. Working with 1 piece at a time, coat chicken in crumb mixture.
Place on racks. Roast 40-45 min. until no longer pink near bone, switching pans between upper and lower racks halfway through cooking time.
