“I Make $80k a Year in My Ice Cream Sandwich Truck!”

Ice cream is one of summer’s most refreshing and delicious treats. Sandwiches are an easy, tasty meal for every season. Put them together and what have you got? A thriving business! For Lori Morrissey, sharing her ice cream sandwiches has been the sweetest side gig. Here’s how she launched her food truck venture.

The Origins of Lori’s Business

‘‘Baking has always brought me joy,” Morrissey, 45, shares. “With more time at home during the early days of the pandemic, I began offering online baking classes. It was so much fun that I decided to share my passion for cookies with the community by opening a food truck with made-to-order ice cream sandwiches! While I had no food truck experience, I did have confidence in the combination of my time-tested cookie recipes and Blue Bell ice cream!

“I contacted a website that sold empty mail trucks, and they helped me find exactly what I envisioned for Lori Lynn’s Cookies & Cream. My best friend and I flew to Houston to get the truck, then drove it home to Colorado. Then, via a Facebook group, I found a kitchen to rent from a woman-owned cupcake shop. With my truck and kitchen secured, I launched the website and social media accounts.

“A year and a half later, customers now recognize my food truck from being parked in public places or at events. We offer delicious cookie and ice-cream flavors — classic chocolate chip cookies with vanilla ice cream being the most popular. I spend early mornings, evenings, and weekends booking events, posting on social media, and managing the kitchen and truck.

“Last year’s revenue totaled $80,000, which I reinvested into the business. I cherish the opportunity to get out of my house and connect people, cookies, and ice cream. In fact, every ice cream sandwich we make comes with a question on the back of the package that encourages people to ask the question to the next person they see!”
