Chances are you have a container or two of chicken, beef, or vegetable stock lying around the dark recesses of your pantry. It’s probably been there for months, but you’ve just never gotten around to cooking with it. If you’re in the mood for some delicious mashed potatoes (who isn’t?), you can put that stock to good use for dinner tonight. It’s the perfect ingredient to give them that extra oomph.
TikTok user Jourdyn Parks recently shared that when she’s making mashed potatoes, instead of just using water, she boils the spuds in a mixture of water and meat stock, like chicken or beef stock, with a pinch of sea salt. Parks doesn’t specify her stock-to-water ratio, but you can adjust it based on how rich of a flavor you want.
According to Parks, not only has she found that adding stock makes mashed potatoes creamier overall, but it also brings out the flavor of everything else in the dish, including the seasoning, milk, and butter.
Her other big tip with this hack is to make sure the stock you’re using matches the meat that you’re eating alongside your mashed potatoes. So if you’re having chicken for dinner, use chicken stock. She says it really brings all of the flavors together and makes your meal cohesive.
While Parks’s hack is geared towards the meat eaters out there, you could realistically try something similar with a vegetable stock to get a little more flavor out of your spuds than you typically would.
And if you’re looking for more ways to take your mashed potatoes to the next level in addition to this simple trick, you can always add a sprinkle of baking powder and throw in a dollop of mayo in the mix. It doesn’t take much to make a meal even better.
