When your wife is Ina Garten, meals must be pretty darn delicious, right? In a new interview, the Barefoot Contessa shared her go-to date-night dinner for Jeffrey, her husband, and the dish is surprisingly simple.
Instead of grilling a steak or boiling pasta, Ina prefers serving Jeffrey her Crispy Mustard Chicken & Frisée recipe, a simple one-pan chicken dish. “I love that you make everything in one pan,” she said during an interview with New York Times’ columnist Frank Bruni at the 92nd Street Y. “There are lots of different textures going on and the hot chicken and cool frisée are lovely. I would cook this every night of the week, if I could.”
Lucky for you (and your tastebuds), you can recreate Ina’s beloved recipe. It’s available in her new book Cook Like a Pro ($20.99, Amazon), as well as on her website. Most of the ingredients are kitchen staples that are probably already in your pantry. Plus, this baked chicken recipe can be made in one pan, which cuts down on the number of dirty dishes you have to wash.
To make Ina’s recipe, all you need to do is bread chicken breasts with panko crumbs and roast with fingerling potatoes. Then, serve the meat and veggies on a bed of greens. Trust us, the tangy mustard vinaigrette and the slightly bitter, peppery bite of the frisée will perfectly balance out the mild potatoes and chicken.
